Carrot Cake

Ingredients:

  • One ¼ cup flour
  • ½ cup Saharan Sustenance Date Sugar
  • 1 tsp baking powder
  • 1 ½ tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ cup Saharan Sustenance Date Syrup
  • ½ cup oil of your choice
  • 1 ½ cup grated carrots (about 2-3 medium carrots)
  • Two eggs
  • 1 tsp vanilla extract

Instructions:

1. Preheat oven to 350 degrees F. 

2. Grease and flour an 8x8-inch cake pan.

3. In a medium bowl, mix flour, date sugar, baking powder, cinnamon, and ginger.

4. In another bowl, mix date syrup, oil, grated carrots, eggs, and vanilla.

5. Add the dry ingredients to the wet, and mix well.

6. Pour mixture into prepared pan.

7. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.

8. Let cool for at least 15 minutes before removing from the pan.

9. Top with your favorite cream cheese frosting once cool.
